Apple Pie Overnight Oats

Overnight oats are an easy and balanced breakfast option. The best part is that once you learn how to make it, the possibilities are endless. My go-to base of overnight oats is four simple ingredients: rolled oats, milk, yogurt and a pinch of salt. Once you learn how to make this base, you can customize it with any mix-ins you prefer.

Place oats in your container first, followed by the yogurt and then the milk. Add a pinch of salt. Stir together. You can either add your mix-ins when you make the overnight oats, or you can add them right before you’re about to eat - whichever you prefer! I like to add it all together at once so it’s one less step to do in the morning.

I like to flavor my overnight oats with the season. Fall and wintertime call for all things apple. Read below to learn how I make my apple pie overnight oats!

Ingredient Spotlights

My go-to overnight oats base:

Old-fashioned rolled oats: be sure to use rolled oats as the texture is just right. Quick oats will be mushy, steel-cut oats will be chewy, old-fashioned oats will be the perfect texture!

Greek yogurt: I use plain Greek yogurt versus a flavored Greek yogurt because I know I will be adding in flavors and sweetness later in the process with mix-ins.

Milk of choice: I use oat milk because it makes creamy overnight oats. The ingredients in Califia farms oat milk are great! You can use any type of milk you prefer. 

Pinch of salt: the salt helps bring out and balance the flavors

Let’s have some fun! Seasonal mix-ins:

Apples: Apples provide crunch as well as fiber. I dice them up and keep the skins on for added nutrition.

Pecans: the pecans provide healthy fats and a satisfying crunch factor! Tip: I try to always add some type of healthy fat as a mix-in. I do this because the base already has the other macronutrients, carbohydrates and protein. The pecans serve as a healthy fat source. Other ideas are: chia seeds, nuts or nut butters.

Woodstock Apple Spread: While shopping at my local Wegmans grocery store, I found Woodstock apple spread. I looked at the ingredients and knew I had to try it. With just two simple ingredients (apples, apple cider) I thought that this would be a great addition to my apple pie overnight oats. Note if you can’t find this exact brand that is okay, you can use whatever apple spread or apple butter you prefer.

Cinnamon: Love it for the flavor and the anti-inflammatory properties.

Apple Pie Overnight Oats

Serves 1

Ingredients

Base

½ cup rolled oats
½ cup plain greek yogurt 
½ cup oat milk, or milk of choice
Pinch of salt


Mix-ins

¼ cup diced apples
⅛ teaspoon cinnamon
¼ cup pecans
1-2 tablespoons of Woodstock apple spread

Instructions

  1. Mix together oats, yogurt and milk. Add a pinch of salt.

  2. Add your flavors! Diced apples, pecans, apple spread and cinnamon. Mix together, or put lid on jar and shake.

  3. Refrigerate overnight. Enjoy the next morning!
